Cauliflower is really having a moment, isn't it? We are seeing it riced, mashed, and used as a low carb sub for potatoes and other starches.
One comfort food that I love but could not partake in when I was vegan was good old fashioned buffalo wings, however these Buffalo Style Cauliwings are really good!
1 head cauliflower cut into florets
1/2C brown rice flour ( use almond flour for Paleo option)
Cayenne, garlic powder, chicken seasoning to taste <-- omit Cayenne if you do not like spicy hot food
Pinch of salt
1/4 - 1/2C Franks buffalo wing style hot sauce. OR. Tabasco buffalo wing style hot sauce
(Can mix with butter or butter alternative, I do not personally eat butter like products so I omit them in my cooking)
Combine flour, water, optional seasonings and salt into a batter, coat florets in batter then arrange on a greased or coated baking sheet.
Bake at 400° for about 30 minutes or until the batter browns.
Toss baked cauliflower in hot sauce
Note: I used about 1tsp each (give or take) cayenne, garlic powder and Badia brand chicken seasoning- this has KICK!
