I was tired of commercially produced fake meat type vegan or vegetarian dishes, like Tofurkey, so I scoured the internet looking for something that was hearty and hit all the fall flavors that I love and still could stand up next to the turkey as a very serious treat.
I finally found a recipe only I have not been able to find it again, so I decided to dig deep into my intuiton and recreate it from a very distant memory. What happened next?
